Chickpea Breakfast Fritters

A lot of people struggle with savory breakfast ideas on a plant-based diet.  This is a delicious and seriously nutritious and filling vegan breakfast that could become a staple for you.  You can keep it completely clean or add a couple of the more indulgent ingredients, diced vegan hot dog and vegan cheese, for a treat.

Ingredients

  • 1/3 cup chickpea flour
  • 1/3 cup almond milk (may also use water)
  • 2 tsp. nutritional yeast
  • 1 tsp. cumin powder
  • 1/4 tsp. tumeric powder
  • 1/4 tsp. garlic powder
  • 1/4 tsp. onion powder
  • 1/4 tsp. kala namak or sea salt
  • 1/4 tsp. black pepper
  • 1/4 tsp. cayenne powder (optional)
  • 1 Tbsp. flax seed meal
  • 1/2 cup diced yellow onion
  • 1/4 cup packed chopped spinach or greens - For me this was about a handful of spinach
  • 2 tsp. safflower oil (or other high heat oil for sauteing)
  • 1/4 tsp. baking powder
  • Lightlife vegan hot dog, diced (optional)
  • Vegan cheese (optional)

Notes:  Do not add the baking powder to the mix until you are ready to fry.  Kala namak is an Indian salt that has a sulfur flavor that tastes like eggs.  You can find it in Indian markets or online.  If you cannot find it, feel free to replace with regular salt or sea salt.  You can find chickpea flour at Indian markets for very cheap!  In the Indian store, it will be called "besan."

Directions

  1. Preheat your pan and add 1-2 tsp. of the oil.  Add the onions and crack or sprinkle some black pepper on top of them.  Saute onions until they are translucent, remove them from the pot and set aside.
  2. In a medium size bowl, combine the rest of the ingredients and whisk until well incorporated.
  3. Add 1-2 tsp. of oil to your pan and preheat the pan.
  4.  Mix in onions, spinach, and baking powder to your chickpea mixture.
  5. Pour batter into hot pan into a circle shape.
  6. At this stage you can sprinkle extra veggies or vegan cheese on top.
  7. Cook for about 5 minutes (until the bottom is golden brown), and then fold in half.  Continue cooking for another minute or so until it is cooked through.  It should be moist and slightly soft on the inside, not gooey, when it is finished cooking.
